BANANA
BREAD
After years of searching, I finally found the ultimate Banana Bread. This
is basically from The
Los Angeles Times California Cookbook although I have made some adjustments.
2 c. mashed banana
3 eggs
1 c. oil
1 t. vanilla
2 c. wholewheat pastry flour
1/2 c. granulated sugar or 1/3 c. date sugar (excellent!)
1 t. soda
1/2 c. chopped walnuts
1. Combine banana, eggs, oil and vanilla and mix well.
2. Sift together the flour, sugar, soda and add to banana mixture. Stir
in nuts.
3. Pour batter into greased and wax paper- lined 9 x 5-inch loaf pan.
Bake at 350 degrees 50 minutes or until done. Or fill greased muffin pans
3/4 full and bake at 350 degrees for 25 minutes.
Makes 1 loaf or 16 muffins
