DR.
SAGINOR'S "SUPER SOUP"
Dr. Saginor is a famous Endocrinologist and Diet Dr. in L.A. I now
quarrel with his approach, but his soup is still super.
8 packets or cubes instant beef or chicken broth
6 cups water
1/2 onion, sliced or chopped
2 medium carrots, sliced
8 mushrooms, sliced
4 ribs celery, chopped
½ bunch fresh mustard greens, chopped or 1 pkg.
(6 oz.) frozen Chinese mustard greens
1 medium zucchini, sliced
1/4 lb. fresh Chinese pea pods
½ bunch spinach, chopped
½ t. dill weed
1/4 t. sweet basil
1/4 t. parsley
Salt and fresh ground pepper to tast
Parmesan cheese, grated
1. Dissolve broth in the water and bring to a boil in a 5-qt. saucepan.
2. Add onion and carrots to broth and leave on slow boil until soft.
3. Let liquid simmer and add mushrooms, celery, mustard greens and zucchini.
Add Chinese pea pods and spinach last 3 minutes of cooking time. DO NOT
OVERCOOK VEGETABLES! Taste for seasoning and add herbs and spices.
4. Garnish with grated Parmesan cheese.
