PORK CHOPS
Adam and Jaclyn attended the City and Country School on 12th Street
in Manhattan. It was small and special, and even the cook, Ottillie, was
wonderful! It may be the only school that serves real whipped cream on
the chocolate pudding! The pork chops have made a lasting impression.
Make a seasoning mix with salt, paprika, onion powder, lemon pepper with
1/2 cup flour. Dredge the pork chops in it. Brown in a skillet, using
a little light oil to start them. Arrange in a shallow baking pan and
cover with foil.
Bake in a 350° oven for 30-40 minutes, until meat has lost the "pink"
and is grayish or white inside.
Serve with sliced yams and apple slices, sprinkled with brown sugar, cinnamon
and butter, baked in a casserole.
