DIAMOND'S POTATO GONDOLAS
Marilyn Diamond is one of the finest vegetarian cooks ever. She approaches
the food as a gourmet cook with a style all her own. This is one of her
greatest recipes, particularly loved by children. With a big salad, they
make a whole meal.
4 c. steamed or baked squash (preferably butternut)
4-5 large baked potatoes
1/2 c. raw butter
Spike or salt to taste
Sweet Hungarian paprika
1. Cut squash in chunks, removing seeds and shell. Mash and set aside.
2. Scrape potatoes from skins, taking care not to break the skins. Reserve
skins, com- bine squash and potato and mash thoroughly. Add butter, reserving
1 T. and mix well. Add seasonings.
3. Stuff shells with mixture. Brush with 1 T. melted butter. Sprinkle
with paprika. Place under broiler 10 minutes or until slightly brown and
crusty.
Serves 4-5
