DATE COOKIES
This is a Sunset Magazine reader recipe. There are no sweeteners!
1/2 c. butter or margarine
1 egg
2 t. vanilla
1 c. unbleach flour
1 t. baking powder
1 c. pitted dates, chopped
1 c. shredded coconut
1 c. chopped walnuts
1. In an electric mixer bowl, beat butter with egg and vanilla until smooth.
2. In a separate bowl, combine flour and baking powder. Gradually add
flour mixture to creamed mixture; beat until blended.
3. Mix in dates, coconut and walnuts.
4. Form dough into two 1-1/2 inch rolls and wrap in waxed paper or foil;
chill in freezer until firm enough to slice easily (about 2 hours) or
up to one month.
5. With a sharp knife, cut rolls into 3/8-inch thick slices. Place slices
on a lightly greased cookies sheet and bake in a 350 degree oven about
12 minutes or until golden. Cool on rack.
