INDIAN
SALAD DRESSING
Traditionally, the salad at an Indian meal consists of finely shredded
raw vegetables, colorfully arranged on a platter and "dressed"
with lime juice and red pepper. We are used to something more and love
our lettuces. I created this dressing to answer that need, and still kept
an authentic flavor.
1 clove garlic
1 green chile
Cilantro
1 small tomato
Juice of half a lemon or lime
2 t. cumin powder
Cayenne, optional
1/2 c. mayonnaise
1/2 c. plain yogurt
In the processor, process garlic, chile, cilantro and tomato until integrated
and mushy. Dump into a bowl and stir in yogurt and mayonnaise, along with
the lemon juice and cumin. If you Like it hot, add a dash of cayenne.
Pour into a jar and store in the refrigerator.
