SLAW
I am constantly changing this recipe, but I almost always include red
and green cabbage, finely chopped red onion, red and green peppers, grated
carrots, parsley. Making cole slaw in the food processor is a breeze.
For the dressing, I use half soy mayonnaise and half plain yogurt. Season
with salt (if using), freshly ground black pepper, and a squeeze of lemon
juice.
On occasion, I also add fresh, crushed pineapple or chopped apples and/or
sunflower seeds.
