DATE-OAT
BARS
These contain no sugar or other sweetener, relying totally on the
natural sweetness of the dates. I made these for the "Flowering"
groups (women helping each other to live better with a higher degree of
health and contentment) that I do with Sue Buckner. We, of course, advocate
the elmination of sugar whenever possible.
1/2 c. sweet butter
1 egg
1 t. vanilla
1 t. grated orange or lemon peel
1-1/3 c. pitted dated, chopped
1 c. regular rolled oats
1/2 c. wholewheat flour
1/2 c. wheatgerm
1 t. baking powder
1/2 t. ground allspice
1/2 t. ground nutmeg
1/2 t. cinnamon
2/3 c. milk
1 c. finely chopped walnuts
1. In an electric mixer, beat butter with egg until creamy. Add vanilla,
grated peel and dates. Mix together well.
2. In a separate bowl, combine oats, flour, wheatgerm, baking powder and
spices. Add oat mixture to butter mixture alternately with milk, beating
on low speed until blended.
3. Press half this mixture onto bottom of a greased 13 x 9 x 2" pan.
Add date mixture. Top with rest of nut mixture.
4. Bake in a moderate oven (350 degrees) 30 minutes.
Makes 25 bars 2x3 inches
