MINT
& CILANTRO CHUTNEY
A simple but excellent fresh chutney from my Indian cooking teacher,
Mukul Ram. Make it very fresh. It tends to darken if it sits around.
Blend together 1 bunch of cilantro (leaves and stems), 1 bunch fresh mint
(leaves only), a small glob of tamarind paste*, 1 green chili, 1 t. sugar,
4 T. water, 1 t. salt. "Strive for a salty, sweet, sour, peppery
taste in the chutney."
