This makes a nice gift, bagged and wrapped with the baking tin.
3 c. wholewheat pastry flour
3 c. unbleached white flour
2 c. soy flour
1/2 c. raw sugar
1/3 c. baking powder
1 T. ground nutmeg
2 T. ground cinnamon
2 c. rolled oats
1 lb. brown sugar
Raisins, sunflower seeds, chopped nuts, chocolate chips, coconut, as desired.
1. In a large bowl, sift together the three flours, raw sugar, baking
powder, nutmeg and cinnamon. Stir in rolled oats and brown sugar.
2. Place 2-1/2 c, in each of 6 plastic bags. Add any of the fruits, nuts
or seeds, etc., if desired. Close each with a twist tie.
Cooking Directions (include with each gift bag):
1. In a bowl, beat together 2 eggs and 1/2 c. salad oil. Add 1 bag dry
mix and beat until well combined.
2. Spread batter in a greased 7 x 11-inch baking pan. Bake in a 350 degree
oven for 20-25 minutes or until wooden pick inserted into the center comes
out clean. Makes about 2 dozen cookies.
