TURKISH
RICE
This recipe comes from Cynthia Gooding, singer of Spanish, Mexican, Turkish
Songs (and others, too) -- a unique personality married to a Turk at one
point.
1 c. white rice
1 T. butter
1 t. salt
2 c. chicken broth, boiling
1 t. dill seed
1/2 c. chopped walnuts
1/2 c. currants
1. Saute rice in butter in a heavy casserole, making sure each grain is
nicely coated.
2. Add boiling broth and immediately turn down flame. Add salt, dill seed,
walnuts and currants.
3. Simmer about 20 minutes on ar very low flame until all liquid is absorbed.
4-6 servings
