INDIAN
WHITE RICE
Saute 1 cup long-grain white rice in sweet butter, along with a couple
cloves, some whole peppercorns, half a cinnamon stick; ½ t. tumeric;
a few cardamon seeds (husked), or a dash of ground cardamon; a dash of
ground coriander; and a dash of ground cumin. When rice is well-coated
and spices have "cooked" slightly, add 2 c. boiling water and
1 t. salt, if using.
Simmer about 20 minutes or until rice fluffs with a fork.
