STUFFED WITH GREEN PEA PUREE
2 packages (10 oz. each) frozen green peas
1/2 t. crumbled dried basil or thyme
1/4 c. minced onion
1/2 c. plus 1 tablespoon melted butter or margarine
Salt and peeper
12 large mushroom caps
1/2 c. grated Swiss cheese
1. Cook peas quickly until just thawed and bright green, adding basil
or thyme. Drain; puree in electric blender or processor or force through
a fine sieve.
2. Saute onion in 1 T. butter until soft. Combite peas and onion and season
with salt and pepper.
3. Dip mushroom caps in ½ c. melted butter and place, cap side
down, in buttered baking dish. Add remaining melted butter to peas and
onion mixture. Stuff mushroom caps.
4. Sprinkle with grated cheese and bake in preheated hot oven (400 degrees)
for 10-15 minutes, or until cheese is bubbly.
