GUACAMOLE
2 avocados, very ripe
1 tomato
Grated onion
1 small can diced green chilis
Lemon juice
Salt
1. Mash avocados and sprinkle with a good shot of lemon juice. (Save pits.)
2. Pour boiling water over tomato; let sit for a minute and then skin.
Add to avocados, along with onion, chilis, and salt. (Be careful not to
add too much salt if you plan to serve with salty chips.) Taste. Add more
lemon juice if necessary, and maybe a dash of cayenne.
If not eating immediately, push pits into center of guacamole and
then cover with Saran Wrap. This will prevent it from discoloring.
