TURKEY
LOAF
We eat very little beef these days, but some- times I miss an old-fashioned
meat loaf. I created this one, using ground turkey. Kirk gobbled it
up. It is great for cold sandwiches if you're lucky enough to have any
left over.
2 lbs. ground turkey
1 large onion, chopped
1 egg
2 carrots
1 clove garlic
Big hunk parsley
a 1-inch knob of fresh ginger, scraped
1 t. rubbed sage
1/2 t. thyme
1/2 t. marjoram
Spycee seasoning to taste+
Black pepper to taste
1. Saute chopped onion in a little butter until golden.
2. Process carrots, garlic, parsley, ginger in the processor using the
steel blade. Com- bine with the turkey, onions, egg, and other seasonings.
3. Pack into a loaf pan. Score the top with a
dull knife.
4. Bake at 375 degrees for l-1/2 hours. It will look golden and crisp
around the edges. It will also be very juicy. (Not fatty, juicy.) I saved
some of this to mix in with Chester's kibble.
