BANANA
WALNUT BARS
We don't always want to make banana bread with those aging bananas.
Try this for a change.
2 c. wholewheat pastry flour
1 t. baking soda
3/4 t. cinnamon
1/4 t. nutmeg
1/2 c. sweet butter
1/2 c, granulated sugar
2 eggs
1 t. vanilla
1-1/2 c. mashed banana
1 c. chopped walnuts or pecans
1 c. raisins
Confectioners sugar
1. Mix flour with soda and spices,.
2. Cream butter with sugar until light and fluffy. Add eggs and vanilla
and beat well. Stir in flour mixture. Add mashed bananas, nuts and raisins
and stir until blended.
3. Pour into greased 15 x 10 x 1-inch pan. Bake in preheated 350 degrees
oven 25 minutes or until done.
4. Cool, then cut in 2-1/2 x 1-inch bars and sprinkle with confectioners'
sugar.
Makes 56 bars
