COTTAGE
CHEESE RAISIN BREAD
This bread is so beautiful it could almost be served as a cake.
1/4 c. butter or margarine
1/4 c. sugar
2 eggs
1 cup small curd cottage cheese
1/2 c. raisins
2 c. wholewheat flour
4 t. baking powder
4 t.. baking soda
1/4 t. salt
1 t. caraway seeds
1/2 c. milk
1. Beat together butter and sugar until fluffy. Beat in eggs, cottage
cheese and raisins. Stir in flour mixed with baking powder, soda, salt
and caraway seeds alternately with milk.
2. Turn into greased and floured 8-inch round layer cake pan.
3. Bake at 375 degrees 10 minutes; reduce heat to 350 degrees and bake
about 40 minutes longer or until a cake tester inserted in center comes
out clean. Cool 10 minutes in pan, then invert and cool on rack.
Makes 1 loaf
