CARRIE
WOLF'S KASHA
During our Beachwood days, Carrie was a frequent dinner guest. I could
depend on her showing up if I made kasha (Wolff brand, of course). She
loves it. This is the real Jewish way of making it.
Roast one cup of kasha (buckwheat groats) in a heavy iron frying pan over
medium heat, stirring frequently with a wooden spoon. When nicely toasted
(you can smell it more than see it), add an egg and continue stirring
until each grain is coated and then dry again.
Add 2 cups boiling water or broth and cover tightly. The kasha will be
ready in 15-20 minutes. Stir midway with a fork to fluff.
