BEEF
STROGANOFF
2 pounds sirloin of beef
Flour
1/3 c. butter
3 medium onions, chopped
1/2 pound mushrooms
Salt and pepper
2/3 c. tomato juice
1/2 c. sherry
2/3 c. sour cream
1. Cut meat in thin strips; dredge with flour.
2. Brown quickly in skillet in half the butter. Remove meat, and add remaining
butter.
3. Add onions and mushrooms, and cook 5 minutes. Add meat, and sprinkle
with salt and pepper. Add tomato juice, sherry and water. Bring to boil,
cover, and simmer 2 hours, or until meat is tender.
4. Season to taste. Stir in sour cream (but do not let it boil or it will
curdle!) and serve at once.
4 servings
Note: If freezing, add sour cream after reheating.
Another Note: Delicious served with buttered noodles sprinkled wtih
poppy seeds.
