CHEESE
CREAMED SPINACH
1 box (10 oz.) frozen chopped spinach
2 T. butter
2 T. flour
1-1/2 cup milk
Dash nutmeg
1/2 cup grated sharp cheddar cheese
1. Using a double boiler or a heavy saucepan on a heat tamer, melt butter
and immediately add flour stirring constantly. Gradually, add milk; continue
stirring (I use a whisk) until mixture begins to thicken. Add nutmeg.
2. Add cheese and immediately remove from pan so that mixture doesn't
curdle.
3. Add barely cooked, very well drained spinach (drain in a colander,
pressing it down with a wooden spoon to expedite drainage).
4. Return to heat just to warm. Serve immediately.
