ORANGE
ALMOND CAKE
I saw this recipe in a magazine one day while waiting for a manicure.
I quickly jotted it down on the back of a scrap of paper and later put
it together. It is light and amazing and contains no flour!
2 large navel oranges
6 eggs
1-1/2 c. ground almonds
2/3 c. sugar (original recipe called for 1 c.)
1 t. baking powder
1. Wash oranges. Boil in water to cover, without peeling, until very soft
(about 30 minutes). Drain and cool. Cut into quarters and remove seeds.
Process in food processor with steel blade to a fairly fine puree, but
not too fine.
2. Beat eggs until thick; add almonds, sugar, baking powder and orange
puree.
3. Pour into deep, 9-inch cake pan, buttered and floured. Bake at 400
degrees one hour or longer. It should be firm to the touch. Note: Use
extra batter for cupcakes. Bake at 400 degrees about 20 minutes or until
firm.
