CREAMY
MACARONI AND CHEESE
8 oz. macaroni shells
6 T. butter or margarine
1/4c. flour
1/2 t. dry mustard
1 t. salt
3/4 t. Worcestershire
3 c. milk
1 small onion, grated
3/4 Ib. sharp Cheddar cheese,
shredded (3 cups)
1. Cook macaroni in boiling salted water until tender; drain. Put in 2-1/2
or 3-qt. casserole.
2. Melt 4 T. butter; blend in flour and seasonings; add milk and onion.
Cook until thickened, stirring constantly. Stir in cheese: (do not allow
it to boil or it will curdle). Pour over macaroni and mix lightly. Sprinkle
with paprika.
3. Bake in moderate oven (375°), 30 minutes or until golden brown.
Note: Sometimes I made this in four individual casseroles and cut
down the baking time a little.
