REFRIGERATOR
CHEESECAKE
2 envelopes plain gelatin
2 eggs, separated
½ c. sugar
½ c. milk
1 lemon
1 pound (2 c.) creamed cottage cheese
1/2 c. cream, whipped
Cornflakes crust
1. Soak gelatin in 1/2 c. cold water.
2. Combine egg yolks, 1/4 c. sugar and milk in top of double boiler; cook
over boiling water until thickened. Add gelatin. Cool.
3. Add grated rind and juice of lemon and sieved cheese. Beat egg whites
stiff with 1/4 c. sugar. Fold meringue and cream cheese mixture.
4. Turn into 9-inch piepan lined with Cornflakes crust (1 c. finely crushed
corn flakes, 1 T. sugar, 1/3 melted butter or margarine, 1/2 t. cinnamon).
Chill. Sprinkle with shredded orange rind, if desired.
8 to 10 servings
