SWEET
POTATO PUDDING
3 c. g rated raw sweet potatoes
1/4 c. Light brown sugar
1 t. nutmeg
1/4 c. light corn syrup
1 c. milk
2 eggs, beaten
1/2 c. chopped pecans
2 T. butter, melted
1. Mix all ingredients in bowl. Blend well. Pour into buttered pan, 12
x 8 x 2-inches.
2. Bake in preheated moderate oven (350) for about 1 hour. Serve warm
with dinner or cold as a dessert with cream or ice cream.
