SALAD
DRESSING
(NINA'S ORIGINAL)
Blend together 1 cup soy or safflower oil; 1/2 cup wine or rice vinegar;
a couple of cloves minced garlic; salt; pepper; a dollop of Dijon mustard;
and whatever herbs appeal to you. Shake furiously. Refrigerate.
The flavors of this dressing will change depending on the kind of oil
(for an elegant dinner I will use part or all olive oil) you use, the
type of vinegar, a different, exotic mustard and the combination of herbs
-- and whether fresh or dried. Experiment. It's always good.
