SOY
BEAN SALAD
3 c. soy beans will yield 6 cups cooked. With this in mind, soajc as many
cups raw as you eventually want twice of cooked. Soak beans, covered with
water, overnight. The next morning, be sure there is water to cover, and
cook with an onion studded with a couple of cloves, a bay leaf and some
celery leaves. Bring to a boil and simmer about 3 hours or until tender.
Drain and cool.
Add the following to the beans: Chopped celery, chopped scallions, chopped
parsley, currants, sunflower seeds, a little lemon juice, pepper, salt
(if using), a good dash of cinnamon. Bind with half mayonnaise, half plain
yogurt.
