ZUCCHINI
BROWNIES
Chocolatey and voluptuous. Everything a contemporary brownie should
be.
1/2 c. sweet butter
1/2 c. oil
1 c. sugar
2 eggs
1 t. vanilla
1/2 c. buttermilk
2-1/2 c. wholewheat pastry flour
1 t. baking soda
1/2 t. baking powder
1/2 c. cocoa (not instant)
1 t. cinnamon
2 c. grated raw zucchini, drained
Chocolate bits+, walnuts
1. In a large bowl, cream butter, oil and sugar. Add eggs, one at a time.
Blend in vanilla and buttermilk.
2. In another bowl combine flour, baking powder, baking soda, cocoa and
cinnamon. Add dry ingredients slowly to creamed mixture. Stir in zucchini.
3. Spread on greased jellyroll pan. Sprinkle with chocolate bits and walnuts
over top and bake at 350 degrees 15-20 minutes. Cool. Cut into 2-inch
squares, as desired.
+This is almost overkill. For less sweetness, eliminate.
