ELLIE'S
APPLE PIE
Ellie, my friend and other half in the Pure Pleasure caper, makes
the best apple pie.
Pie Crust
3 c. wholewheat pastry flour
1 t. salt
1 cup shortening
1/2 c. cold water
1. Sift flour and salt.
2. Cut in shortening with pastry blender or two knives. When mixture is
crumbly and the size of peas, mix in water, first with blender or knives,
then with hands. Caution: Do not handle too much. The more you handle,
the tougher the dough gets.
3. Makes 4 single crusts. Note: If you do not wish to make two pies, freeze
half the dough for future use.
Apple Pie Filling
5 Macintosh apples
3 green apples
1/2 c. sugar
1 t. cinnamon
Dash nutmeg
Butter
1. Thinly slice apples.
2. Thoroughly mix apples with sugar and spices. Put in pie shell, dot
with butter.
3. Place second crust on top. Prick with a fork.
4. Bake 10 minutes at 450°; then reduce heat to 350° and bake
50 minutes, or until crust is golden.
